Food Smoking
Jo Hanson and her partner Georgina Perkins owned and ran a highly successful smoke house and now provide food smoking courses from their home in Cumbria. The course theory includes tips and rules from the highly experienced Jo but the technical stuff is mixed in with hands-on experimentation with brining with spices. Professionally made smokers and DIY ones are demonstrated on the course and several smaller ones are available to purchase at the end of the day enabling you to start smoking food as soon as you get home. The food you make during the day, plus food made by the experts, is consumed in tasting sessions and during a sit-down meal in their home.
